Bamboo Shoot/Kalale Curry




Ingredients:

Sprouted green gram 1 cup
Sprouted black gram 1 cup
Kalale/Bamboo shoots 2-3 cups
Onion 1 medium size
Tomato 1
Green chilies 2
Tamarind grape size
Coconut 1/2 - 1 cup
Red chili powder 1 tsp
Coriander powder 1 tsp
Turmeric powder ¼ tsp
Fenugreek ¼ tsp
Chana dal ¼ tsp
Urad dal ¼ tsp
Cumin seeds ¼ tsp
Mustard ¼ tsp
Curry leaves 1 string
Asafoetida
Salt
ghee


Method:

1. Wash Bamboo shoots 3-5 times and cut into pieces.

2. Pressure cook sprouted green gram, sprouted black gram and bamboo
shoots with little salt and water. [5 whistle]

2. Heat oil in a frying pan, add chana dal, urad dal, fenugreek seeds and
cumin seeds fry them. add slit green chillies fry, add curry leaves and
chopped onion, fry till transparent. Add tamarind, red chilli powder,
coriander powder and turmeric powder mix well. Add grated coconut, mix
well and switch off the stove. Let it cool. After cooling grind them into
smooth paste along with ½ cup water. [Masala]

3. Heat ghee in a pan, add mustard seeds, when it pops add asafoetida. Add
ground masala and chopped tomato. Let it cook for few minutes. Add cooked
spouted green gram, black gram and bamboo shoots cover the lid and cook for
another 5 minutes in low heat. Switch off the stove.

4. Bamboo shoot curry is ready to serve.
